This is especially for my niece Shannon to try in her silicone muffin pan - but I thought I would post it instead of just sending it to her because they are really awesome!
Banana-Chocolate Chip Muffins
Makes 1 dozen
½ c butter, softened
1 c sugar
2 eggs
3 ripe bananas, mashed
1 ¼ cup flour
½ tsp baking soda
4 oz (1/2 c) chocolate chips
Preheat the oven to 350°. Coat a 12-cup muffin tin with nonstick cooking spray. In a large bowl, beat the butter and sugar until creamy. Add the eggs and beat until light and fluffy. Stir in the bananas, mix well. Add the flour and baking soda, stirring just enough to moisten. Toss in chocolate chips. Spoon the batter into the muffin cups and bake for 25-30 minutes, or until a wooden toothpick inserted in the center comes out clean.
